1. Pat chicken dry with paper towels and place it on a rimmed baking sheet that you’ve lined with foil or parchment paper.
  2. Rub all sides of the chicken first with olive oil and then with the spice rub. Arrange the chicken thighs skin side up on the pan.
  3. Bake at 400 degrees F for 30 to 45 minutes, until the internal temperature of the chicken is 165 degrees F.
  4. Let chicken rest for 5 minutes before serving.
