This Dockmaster Coconut Lime Snapper is a vibrant, tropical dish that brings together the bold flavors of Bird’s Nest Dockmaster spice rub with creamy coconut, zesty lime, and fresh mango salsa. Perfect for a quick weeknight dinner or a special occasion, this recipe showcases how easy it is to create restaurant-quality seafood at home. The Dockmaster spice blend is specifically crafted for seafood, making it foolproof even for beginner cooks. Paired with a silky coconut-lime sauce and refreshing mango salsa, every bite is a taste of the islands.


Ingredients (2–4 servings)

Fish

  • 2–4 snapper fillets (or any firm fish)
  • 1–2 tbsp Bird’s Nest Dockmaster spice rub
  • 1–2 tbsp neutral oil (high heat)
  • 1 lime (zest + juice)

Coconut-lime Sauce

  • 1/2 cup coconut milk
  • 1 tsp lime zest + 1–2 tbsp lime juice
  • 1 small garlic clove, grated
  • 1 tsp honey or brown sugar

Mango salsa

  • 1 ripe mango, diced
  • 1/4–1/2 red onion, finely diced
  • 1 small tomato, diced
  • 1–2 tbsp lime juice
  • Fresh scallion
  • Pinch of salt

DIRECTIONS
  1. Pat fish VERY dry with paper towel.
  2. Rub with oil, Dockmaster spice rub and lime zest.
  3. Rest 10 minutes, uncovered if you can (helps the surface dry resulting in a better crust).

Optional pro move: Dust the fish lightly with cornstarch on the outside right before searing. It gives a delicate crisp edge.

Sear without sticking

  1. Heat a skillet (cast iron or nonstick) on medium-high until hot.
  2. Add a thin film of oil.
  3. Lay fish down and don’t move it for 3–4 mins (most breakage comes from flipping too early).
  4. Flip and cook 1–2 mins more (depending on thickness). The fish is done when it flakes easily and looks opaque.
  5. Finish with a squeeze of lime.

2) Coconut-lime Sauce

  1. Simmer coconut milk 2–4 mins to thicken slightly.
  2. Stir in lime zest, lime juice, minced garlic and honey.
  3. Spoon over the fish after cooking (so it doesn’t soften your crust).

3) Salsa

Mix mango, chopped onion, diced tomato, lime juice, chopped scallion.

Let it sit 5–10 minutes so the flavours link up.
